Run the NANAKAI kitchen operations at TARKA Edinburgh, a Japanese izakaya restaurant with a strong cultural identity. You will be responsible for delivering an authentic and consistent menu whilst overseeing all kitchen operations, training and managing F&B staff, and ensuring compliance with health and safety standards. This role requires strong leadership skills, a commitment to maintaining a safe and sanitary kitchen, and ensuring efficient day-to-day operations that meet brand standards and legal requirements.
Deliver the NANAKAI and café menu with quality and consistency
Oversee all aspects of kitchen operations, including food preparation, cooking, and plating
Monitor food quality, portion control, and presentation to ensure adherence to standards
Manage inventory levels, order supplies, and control food costs
Maintain cleanliness and organisation in the kitchen with proper storage and handling of ingredients
Delegate management roles to sous chefs and CDPs at your discretion
Recruit, hire, and train kitchen staff according to company standards
Create kitchen, bar, café and FOH rotas and serve as point of referral for all team members
Provide ongoing coaching and feedback to foster continuous professional development
Ensure compliance with all health and safety regulations, including HACCP standards
Conduct regular inspections to identify and address safety hazards or sanitation issues
Implement proper procedures for food storage, handling, and disposal to prevent contamination
Work duty manager shifts as required
Proven experience as a Head Chef or Sous Chef in a similar work environment
Level 3 hygiene and food safety certificate preferred
Culinary qualifications and certifications welcomed
Strong leadership and communication skills with the ability to motivate and inspire a team
Passion for delivering exceptional dining experiences
Knowledge of food cost control, inventory management, and kitchen budgeting
Familiarity with industry trends, culinary techniques, and best practices
Flexibility to work evenings, weekends, and holidays as required
